Cranberry Dark Chocolate Cookies

Ingredients

Dry Ingredients

  • 1 cup Oats
  • 2 cups Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Kosher Salt

Creamed Mixture

  • 9 oz Butter, unsalted
  • 1 cup Brown Sugar
  • ½ cup White Sugar

Additional Ingredients

  • 2 large Eggs, room temperature
  • 1 Tbsp Vanilla
  • 1 ½ cups Dark Chocolate Chips
  • 1 ½ cups Dried Cranberries
  • ¾ cup Chopped Pecans (optional)

Instructions

  1. Preheat the oven to 325°F and line baking sheets with parchment paper.
  2. In a large bowl, mix the dry ingredients together and set aside.
  3. Cream the butter and sugars together in a stand mixer until well combined.
  4. Add the eggs one at a time, then mix in the vanilla, scraping the bowl as needed.
  5. Gradually add the dry ingredients to the creamed mixture until fully incorporated.
  6. Stir in the chocolate chips, cranberries, and pecans (if using) on low speed.
  7. Drop spoonfuls of dough onto the prepared baking sheets, leaving space between each.
  8. Bake for 13 to 15 minutes until the edges are golden brown and the tops have slight color.
  9. Allow the cookies to cool on the baking sheets before transferring them to an airtight container.
