Ingredients

The fruit filling

  • 1 cup peeled ripe peaches (about 2 medium)
  • ¾ cup blackberries
  • 1 tablespoon flour

  • couple dashes ground cinnamon
  • couple dashes ground ginger

The topping

  • 3 tablespoons flour
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 4 tablespoons chopped pecans
  • teaspoon ground cinnamon
  • 2 tablespoons cold butter
  • optional coarse sugar

Additional ingredients

  • to serve vanilla ice cream

Instructions

  1. Preheat the oven to 375°F and prepare a small baking sheet with foil.
  2. In a bowl, combine the diced peaches and blackberries with flour, sugar, cinnamon, and ginger, then toss to mix.
  3. Divide the fruit mixture into 2 ramekins or small baking dishes.
  4. In another bowl, mix the topping ingredients: flour, sugar, brown sugar, chopped pecans, and cinnamon.
  5. Add the cold butter to the topping mixture and use your hands to combine until it resembles coarse crumbs.
  6. Spread the topping evenly over the fruit in the ramekins.
  7. Place the ramekins on the foil-lined baking sheet and bake for 30-35 minutes until the topping is browned.
  8. Let cool for at least 10 minutes before serving, optionally with a scoop of ice cream.
