Ingredients

The mushrooms

  • 1 pound mushrooms, sliced (shiitake, cremini, or button)

The sauce

  • 3 tablespoons vegan butter, salted
  • 5 cloves garlic, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • pinch salt

Instructions

  1. Melt the vegan butter in a skillet over medium-high heat.
  2. Add the sliced mushrooms and a pinch of salt, stirring to combine.
  3. Cook the mushrooms for 3 to 5 minutes on one side without moving them, then flip and cook for another 3 to 5 minutes.
  4. Lower the heat to medium and add the garlic, cooking for 30 seconds to 1 minute until fragrant.
  5. Stir in the chopped parsley and cook for another 30 seconds, then remove from heat and serve.
