Ingredients

The Dumplings

  • cups flour
  • ¾ cup cornmeal
  • 2 teaspoons baking powder
  • ½-¾ teaspoons salt
  • 3 tablespoons sugar
  • 2-3 tablespoons butter
  • 1 cup milk
  • 1 teaspoon nutmeg
  • oil for deep-frying

Mango Coleslaw

  • 1 cup purple cabbage
  • 4 cups green cabbage
  • 2 cups mango
  • ½ medium onion
  • ½ red bell pepper
  • 2 cups carrots

Dressing

  • ½ tablespoon mustard
  • ¼ tablespoon honey
  • ½ cup fat-free Greek yogurt
  • ½ cup low-fat mayonnaise
  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper
  • 1 lemon juiced
  • ½-1 teaspoon sriracha

Instructions

  1. Combine the coleslaw ingredients in a large bowl.
  2. In another bowl, mix the dressing ingredients and combine with the coleslaw mixture.
  3. For the dumplings, mix the dry ingredients in a large bowl.
  4. Add the butter and create a well in the mixture to add the milk.
  5. Knead the dough for about 30 seconds to form a soft dough.
  6. Divide the dough into 12-14 pieces and let it rest for at least 10 minutes.
  7. Shape the dough into biscuits or logs depending on your preference.
  8. Heat oil in a large saucepan to 350°F (177°C).
  9. Fry the dumplings until golden brown, about 7 minutes, then drain on paper towels.
