Ingredients

Dumpling Dough

  • 8 oz glutinous rice flour
  • 180 ml water

Filling

  • 3 oz ground peanuts
  • 3 ½ tablespoons fine sugar
  • 3 ½ tablespoons peanut butter

Ginger Syrup

  • 5 cups water
  • 1 cup sugar
  • 4 oz old ginger
  • 2 leaves screwpine leaves or pandan leaves

Instructions

  1. Prepare the filling by mixing ground peanuts, sugar, and peanut butter until it can be shaped into balls, then divide into 24 balls.
  2. In a bowl, mix glutinous rice flour with water to form a smooth paste, then divide into 24 equal balls.
  3. Flatten each dough ball, place a filling ball in the center, and seal the dumpling by folding and rolling it into a smooth shape.
  4. To make the ginger syrup, boil water with ginger and pandan leaves for 10-15 minutes, then add sugar and simmer until reduced to about 4 cups.
  5. Boil a separate pot of water and gently drop in the dumplings. Once they float, transfer them to the ginger syrup and serve immediately.
