Ingredients

Dumplings

  • 8 oz glutinous rice flour
  • 180 ml water
  • ¼ cup black sesame seeds
  • ¼ cup sugar
  • ½ stick unsalted butter

Ginger Syrup

  • 5 cups water
  • 1 cup sugar
  • 4 oz old ginger
  • ½ teaspoon sweet osmanthus
  • 2 pieces screwpine leaves or pandan leaves

Instructions

  1. Toast the black sesame seeds until aromatic and cool them.
  2. Grind the toasted sesame seeds into a fine paste and mix with sugar and butter to form a filling.
  3. Combine glutinous rice flour and water to form a dough, then divide into 16-20 balls.
  4. Flatten each ball, add a small amount of sesame filling, seal, and shape into a ball.
  5. Prepare the ginger syrup by boiling water with ginger and optional leaves, then add sugar and osmanthus.
  6. Simmer the syrup until reduced to about 4 cups.
  7. Boil the dumplings in water until they float, then transfer to the ginger syrup and serve.
