Cheesy Wonton Breakfast Cups

Ingredients

  • 12 pieces wonton wrappers
  • 1 cup fresh spinach, chopped
  • 1 cup cooked ground sausage or bacon crumbles
  • 12 large eggs
  • pinch coarse salt
  • pinch ground black pepper
  • pinch crushed red pepper flakes (optional)
  • ½ cup shredded cheddar cheese
  • 1 piece scallion, sliced

Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 12-cup muffin tin and tuck the wonton wrappers into each muffin cup, coating with cooking spray.
  3. Bake the wonton wrappers for 5-6 minutes until just starting to brown, then remove from the oven.
  4. Distribute the chopped spinach and sausage or bacon in each wonton cup.
  5. In a medium bowl, crack the eggs and season with salt, black pepper, and crushed red pepper flakes. Whisk until smooth.
  6. Scoop the egg mixture into each wonton cup until ⅞ full using a ¼ cup measuring cup.
  7. Sprinkle shredded cheese on top of each egg cup.
  8. Bake for 18-19 minutes until the egg is just set, then garnish with sliced scallions.
