Cheesy Wonton Breakfast Cups

Instructions
- Preheat the oven to 350°F.
- Grease a 12-cup muffin tin and tuck the wonton wrappers into each muffin cup, coating with cooking spray.
- Bake the wonton wrappers for 5-6 minutes until just starting to brown, then remove from the oven.
- Distribute the chopped spinach and sausage or bacon in each wonton cup.
- In a medium bowl, crack the eggs and season with salt, black pepper, and crushed red pepper flakes. Whisk until smooth.
- Scoop the egg mixture into each wonton cup until ⅞ full using a ¼ cup measuring cup.
- Sprinkle shredded cheese on top of each egg cup.
- Bake for 18-19 minutes until the egg is just set, then garnish with sliced scallions.
