No-Knead Buttermilk Pull-Apart Rolls

Ingredients

  • 4.25 cups all-purpose or bread flour
  • 4 to 5 teaspoons kosher salt
  • 2 tablespoons sugar
  • 2 teaspoons instant yeast
  • 1 scant cup boiling water
  • 1 scant cup buttermilk
  • 6 tablespoons melted butter
  • to taste none flaky sea salt

Instructions

  1. Whisk together the flour, salt, sugar, and yeast in a large bowl.
  2. Pour boiling water over buttermilk in a separate container and let it stand for 10 minutes.
  3. Add the buttermilk mixture and 4 tablespoons of melted butter to the dry ingredients, mixing until a sticky dough forms.
  4. Cover the bowl and let the dough rise in a warm place for 2 hours until doubled in size.
  5. Grease a 9×13-inch baking dish and flour a work surface.
  6. Turn the dough out onto the floured surface and divide it into 12 or 24 pieces, shaping each into a ball.
  7. Place the dough balls into the prepared pan, spacing them evenly.
  8. Cover the pan and refrigerate overnight or let it rise for 25 to 35 minutes at room temperature before baking.
  9. Preheat the oven to 400ºF and bake the rolls for 20-25 minutes until golden brown.
  10. Brush the rolls with the remaining melted butter and sprinkle with flaky salt before serving.
