Ingredients

The dough

  • cup whole wheat pastry flour or white whole wheat flour
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 1 cup very warm water
  • teaspoons active dry yeast
  • 2 tablespoons honey
  • 1 large egg
  • 4 tablespoons butter, melted

For brushing

  • 2 tablespoons butter, melted

Instructions

  1. Combine ¼ cup warm water, yeast, and 1 tablespoon honey in a small bowl and let it sit until foamy.
  2. In a large bowl, mix whole wheat flour, all-purpose flour, and salt.
  3. In another bowl, combine the remaining warm water, honey, egg, and melted butter.
  4. Add both water mixtures to the flour and knead the dough until it forms a ball.
  5. Grease the bowl, cover the dough, and let it rise in a warm place for 25 minutes.
  6. Grease a baking dish and punch down the dough, then divide it into 9 balls.
  7. Place the dough balls in the dish, cover, and let them rise for another 15-25 minutes.
  8. Preheat the oven to 400°F and brush the tops of the rolls with melted butter.
  9. Bake for 20-25 minutes until lightly browned and serve immediately.
