Chicken Tzatziki Pizza

Ingredients

Tzatziki Sauce

  • 1 cup plain greek yogurt
  • ½ cup sour cream
  • 2 cloves garlic
  • 1 medium cucumber, peeled, cut in quarters and seeded
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 tablespoons fresh dill
  • to taste kosher salt

Pizza

  • 4 pieces Greek flatbread or pita breads
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded chicken breast
  • ½ cup sliced kalamata olives
  • cup sliced sun-dried tomatoes
  • 1 cup quartered artichoke hearts packed in water, drained
  • cup feta cheese
  • to taste oregano
  • to taste kosher salt
  • for garnish fresh dill
  • for garnish red chili pepper flakes

Instructions

  1. Prepare the tzatziki sauce by chopping garlic, cucumber, and dill in a food processor.
  2. Add yogurt, sour cream, lemon juice, and dill to the processor and blend. Season with salt and refrigerate for an hour.
  3. Preheat the oven to 450°F.
  4. Place the pita breads on a baking sheet lined with parchment paper, domed side down.
  5. Spread 1-2 tablespoons of tzatziki on each pita, then sprinkle with mozzarella cheese.
  6. Layer shredded chicken, olives, sun-dried tomatoes, and artichoke hearts on top of the cheese.
  7. Sprinkle feta cheese and oregano over the toppings.
  8. Bake for 10-12 minutes or until the cheese is melted and the feta is golden.
  9. Garnish with fresh dill and red chili flakes before cutting into quarters and serving.
