Ingredients

Corn Cooked in Coconut Milk

  • ½-1 12-ounce can coconut milk
  • enough water to cover the corn
  • 4-6 ears corn
  • 1 tablespoon Creole seasoning
  • 1-2 sprigs thyme
  • to taste salt and pepper salt and pepper
  • optional homemade garlic butter

Instructions

  1. Prepare the water by adding it to a large pot along with the corn and salt for plain boiled corn.
  2. Bring the water to a boil and cook the corn for 5-7 minutes, adjusting the time based on your preferred doneness.
  3. Once cooked, drain the water and serve the corn with garlic butter.
  4. For corn cooked in coconut milk, add coconut milk and water to a large pot along with the corn, Creole seasoning, thyme, and salt and pepper.
  5. Simmer for about 5-7 minutes, adjusting the time for desired tenderness.
  6. Drain the liquid and serve the corn with garlic butter.
