Ingredients

Lemon Pepper Vinaigrette

  • cup olive oil
  • 2 whole lemons (juice + zest)
  • ¼ cup fresh basil
  • 1 tablespoon dijon mustard
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper

Super Green Pizza

  • ½ pound pizza dough (homemade or store-bought)
  • ½ cup crumbled feta cheese
  • 1 small bunch asparagus (cut in half lengthwise)
  • 1 cup fresh sugar snap peas or frozen peas
  • 8 ounces burrata cheese
  • 6 ounces thinly sliced prosciutto
  • 1 handful sprouts or watercress
  • 1 tablespoon chopped fresh chives
  • to taste crushed red pepper flakes

Instructions

  1. Combine all vinaigrette ingredients in a blender and pulse until combined, adjusting salt and pepper to taste.
  2. Preheat the oven to 450°F and grease a large baking sheet with olive oil.
  3. Roll out the pizza dough on a floured surface to about a 10-12 inch circle and transfer it to the baking sheet.
  4. Spread the dough with vinaigrette and top with feta, asparagus, and peas. Drizzle with olive oil, salt, and pepper.
  5. Bake the pizza for 8-10 minutes until the crust is golden and the veggies are lightly charred.
  6. Remove from the oven and top with burrata and prosciutto, letting it sit for 5 minutes to allow the burrata to melt.
  7. Finish with watercress, chives, and crushed red pepper before serving with remaining vinaigrette.
