Ingredients

  • 1 package Instant Pudding Mix
  • cups almond flour
  • ½ tsp baking powder
  • 1 large egg
  • cup ghee (or coconut oil), melted
  • cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup chocolate chips

Instructions

  1. 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. 2. In a small bowl, combine the Instant Pudding Mix with the almond flour and baking powder.
  3. 3. In a separate bowl, whisk together the egg, melted ghee, maple syrup, and vanilla extract.
  4. 4. Add the dry ingredients to the wet ingredients and mix until well combined. Stir in the chocolate chips.
  5. 5. Drop the cookie dough by rounded spoonfuls onto the lined baking sheet and flatten them slightly.
  6. 6. Bake for 14-16 minutes or until golden brown.
