Instructions
- Prepare the cucumber by cutting it into large pieces suitable for your juicer.
- If using a juicer, process the vegetable and fruit pieces, collecting the juice in a pitcher, and stir in the coconut water.
- If using a blender, combine the cucumber, pineapple, lemon, ginger, and coconut water, and blend until smooth.
- Strain the blended juice through a nut milk bag or cheesecloth to remove pulp.
- Serve the juice immediately, optionally garnished with a pineapple wedge or cucumber slices.
