Roasted Red Pepper Sauce

Ingredients

  • ½ cup jarred roasted red peppers
  • ¼ cup smoked almonds and/or cashews
  • 1 piece plum tomato, chopped
  • 2 Tablespoons red wine vinegar
  • 1 clove garlic
  • a pinch paprika
  • ¼ teaspoon crushed red pepper flakes
  • cup heavy cream or non-dairy milk/cream
  • to taste kosher salt
  • to taste black pepper

Instructions

  1. Blend all ingredients except for the cream in a high-speed blender or food processor, starting at low speed and increasing to high until smooth.
  2. Transfer the blended sauce to a small saucepan over low heat.
  3. Stir in the cream and continue to heat, stirring occasionally until warm and smooth, about 2-4 minutes.
  4. Season to taste and serve immediately.
