Ingredients

  • 8 circles watermelon
  • 2 cups chopped lettuce
  • ¼ cup feta cheese
  • 1 tablespoon balsamic vinegar

Instructions

  1. Cut the watermelon into 3/4-inch thick slices.
  2. Use a 3-inch cookie cutter or glass to cut out 8 watermelon circles.
  3. Set up four plates and place one watermelon circle on each plate.
  4. Top each watermelon circle with 1/4 cup of chopped lettuce.
  5. Sprinkle ½ tablespoon of feta cheese on each pile of lettuce.
  6. Place the remaining 4 watermelon circles on top of each lettuce pile.
  7. Top with the remaining lettuce and feta.
  8. Drizzle each salad with 1/4 tablespoon of balsamic vinegar.
  9. Serve immediately.
