Stacked Watermelon Salad

Instructions
- Cut the watermelon into 3/4-inch thick slices.
- Use a 3-inch cookie cutter or glass to cut out 8 watermelon circles.
- Set up four plates and place one watermelon circle on each plate.
- Top each watermelon circle with 1/4 cup of chopped lettuce.
- Sprinkle ½ tablespoon of feta cheese on each pile of lettuce.
- Place the remaining 4 watermelon circles on top of each lettuce pile.
- Top with the remaining lettuce and feta.
- Drizzle each salad with 1/4 tablespoon of balsamic vinegar.
- Serve immediately.
