Easy Fresh Mexican Salsa

Ingredients

  • 2 cups chopped fresh tomatoes
  • 15 ounces fire roasted chopped tomatoes
  • ½ cup sliced green onion
  • ½ cup chopped sweet or yellow onion
  • 1 cup chopped cilantro
  • 2 cloves fresh garlic
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon sea salt
  • to taste cayenne, chipotle pepper or fresh jalapeños (optional)

Instructions

  1. If using roasted garlic, prepare it by peeling and mixing with a splash of oil or veggie broth and some salt, then roast in foil at 400°F for about 20-25 minutes.
  2. Drain the fire roasted tomatoes.
  3. Place all ingredients except green onions and cilantro into a food processor or blender and pulse until coarsely chopped.
  4. Add green onions and cilantro and pulse a few more times.
  5. If you prefer a less liquid salsa, drain using a fine mesh strainer.
  6. Serve the salsa.
