Peanut Butter Jelly Swirl Banana Bread

The swirl
Instructions
- Preheat the oven to 350°F and line a 9x5x3 loaf pan with parchment paper.
- In a medium bowl, whisk together the almond flour, arrowroot flour, baking powder, and sea salt.
- In a blender, combine the bananas, coconut sugar, eggs, ⅓ cup of peanut butter, and vanilla, then blend until smooth.
- Pour the blended mixture into the bowl with the dry ingredients and mix well.
- Pour half of the batter into the prepared loaf pan.
- Dollop spoonfuls of the remaining ⅓ cup of peanut butter and ¼ cup of jam over the batter.
- Top with the remaining batter and dollop the remaining jam on top.
- Use a toothpick or knife to swirl the jam into the batter.
- Bake for 35 minutes, then cover with aluminum foil and bake for an additional 17-20 minutes until a toothpick comes out clean.
- Let cool for 15 minutes before lifting the loaf out of the pan and placing it on a cooling rack for 20 minutes before slicing.
