Ingredients

The bread

  • 3 cups almond flour
  • ½ cup arrowroot flour (or corn starch)
  • 2 tsp baking powder
  • ½ tsp sea salt
  • ¼ cup coconut sugar
  • 3 very ripe bananas
  • 3 large eggs
  • cup creamy peanut butter
  • 1 tsp vanilla extract

The swirl

  • ¼ cup jam of choice

Instructions

  1. Preheat the oven to 350°F and line a 9x5x3 loaf pan with parchment paper.
  2. In a medium bowl, whisk together the almond flour, arrowroot flour, baking powder, and sea salt.
  3. In a blender, combine the bananas, coconut sugar, eggs, ⅓ cup of peanut butter, and vanilla, then blend until smooth.
  4. Pour the blended mixture into the bowl with the dry ingredients and mix well.
  5. Pour half of the batter into the prepared loaf pan.
  6. Dollop spoonfuls of the remaining ⅓ cup of peanut butter and ¼ cup of jam over the batter.
  7. Top with the remaining batter and dollop the remaining jam on top.
  8. Use a toothpick or knife to swirl the jam into the batter.
  9. Bake for 35 minutes, then cover with aluminum foil and bake for an additional 17-20 minutes until a toothpick comes out clean.
  10. Let cool for 15 minutes before lifting the loaf out of the pan and placing it on a cooling rack for 20 minutes before slicing.
