Ingredients

Chia Pudding

  • ΒΌ cup chia seeds
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract

Fruit Puree

  • 1 cup diced mango
  • 1 large banana

Optional Toppings

  • to taste diced mango
  • to taste unsweetened shredded coconut

Instructions

  1. Mix chia seeds, coconut milk, and vanilla extract in a container and refrigerate overnight or for at least 4 hours until set.
  2. Blend diced mango and banana until smooth and refrigerate until the chia pudding is set.
  3. Once set, assemble jars by adding a layer of fruit puree, followed by chia pudding, and repeat layers.
  4. Top with additional diced mango and shredded coconut if desired.
