Instructions
- Mix chia seeds, coconut milk, and vanilla extract in a container and refrigerate overnight or for at least 4 hours until set.
- Blend diced mango and banana until smooth and refrigerate until the chia pudding is set.
- Once set, assemble jars by adding a layer of fruit puree, followed by chia pudding, and repeat layers.
- Top with additional diced mango and shredded coconut if desired.
