Mango Coconut Chia Seed Pudding

Ingredients

The pudding

  • ¼ cup chia seeds
  • 1 cup Silk Nutchello Toasted Coconut + Cashews
  • teaspoons maple syrup
  • 1 mango, peeled and cubed
  • 2 tablespoons coconut flakes

For garnish

  • to taste fresh lime juice
  • as needed slices of kiwi
  • as needed slices of strawberries

Instructions

  1. Combine chia seeds and Silk Nutchello in a bowl and whisk until mixed.
  2. Add maple syrup to taste and cover the mixture, then refrigerate for at least 2 hours to set.
  3. Once set, spoon the pudding into serving cups.
  4. Puree the mango cubes until smooth and layer over the pudding.
  5. Top each cup with coconut flakes and garnish with lime juice, kiwi, and strawberries.
