Ingredients

The pudding

  • 3 cups coconut milk
  • 2 tbsp pure maple syrup
  • ½ tsp vanilla extract
  • ½ cup chia seeds

The fruit

Instructions

  1. In a large bowl, whisk together the coconut milk, maple syrup, and vanilla extract.
  2. Slowly whisk in the chia seeds to avoid clumping, stirring every few minutes for about 10 minutes.
  3. Refrigerate for at least an hour.
  4. In a blender, puree the strawberries into a chunky puree and set aside.
  5. Rinse the blender and puree the mango, then transfer it to a bowl.
  6. Layer the pudding in jars or glasses: start with strawberry puree, then chia pudding, followed by mango puree, and more chia pudding.
  7. Refrigerate for a couple more hours if needed to thicken.
  8. Top with sliced strawberries and mango chunks before serving.
