Instructions
- In a large bowl, whisk together the coconut milk, maple syrup, and vanilla extract.
- Slowly whisk in the chia seeds to avoid clumping, stirring every few minutes for about 10 minutes.
- Refrigerate for at least an hour.
- In a blender, puree the strawberries into a chunky puree and set aside.
- Rinse the blender and puree the mango, then transfer it to a bowl.
- Layer the pudding in jars or glasses: start with strawberry puree, then chia pudding, followed by mango puree, and more chia pudding.
- Refrigerate for a couple more hours if needed to thicken.
- Top with sliced strawberries and mango chunks before serving.
