Mango Chia Pudding

Instructions
- Puree the mango in a blender and set aside most of it for layering.
- In a bowl, whisk together 1 tablespoon of the mango puree, coconut milk, water, maple syrup, and vanilla extract.
- Slowly add the chia seeds while whisking continuously.
- Cover the bowl and refrigerate for an hour to thicken.
- After an hour, check the texture and adjust with water if too thick.
- Divide the pudding into jars, layering chia pudding and mango puree.
- Store any leftovers in the refrigerator.
