Ingredients

  • 2 cups chopped mango
  • 1 ¼ cups full-fat coconut milk
  • ½ cup water
  • 2 tbs pure maple syrup
  • ½ tsp vanilla extract
  • ½ cup chia seeds

Instructions

  1. Puree the mango in a blender and set aside most of it for layering.
  2. In a bowl, whisk together 1 tablespoon of the mango puree, coconut milk, water, maple syrup, and vanilla extract.
  3. Slowly add the chia seeds while whisking continuously.
  4. Cover the bowl and refrigerate for an hour to thicken.
  5. After an hour, check the texture and adjust with water if too thick.
  6. Divide the pudding into jars, layering chia pudding and mango puree.
  7. Store any leftovers in the refrigerator.
