Matcha-Mango Chia Pudding

Ingredients

The pudding

  • cups unsweetened nut or alternative milk
  • ¾ cup chia seeds
  • 2 Tbsp. honey
  • 1 Tbsp. matcha powder
  • ¼ tsp. kosher salt

The fruit

  • 1 16-oz. bag frozen mango

Instructions

  1. Whisk together the milk, chia seeds, honey, matcha powder, and kosher salt in a large bowl.
  2. Let the mixture sit for 15 minutes, then stir well and let it sit again for another 15 minutes until the chia seeds are plump.
  3. While the chia pudding is resting, smash the thawed mango in its bag with a rolling pin until mostly smooth.
  4. Divide the smashed mango among 4 to 6 small glasses or jars, then spoon the chia pudding on top, dividing it evenly.
