Ingredients

The pudding

  • ½ banana mashed
  • ¼ cup nut butter
  • 1 cup coconut milk
  • ¼ cup chia seeds
  • 1 tsp vanilla
  • ½ tsp cinnamon

Toppings

  • to taste raw honey
  • optional chopped nuts

Instructions

  1. Mash the banana and divide it evenly between two small jars.
  2. Layer a spoonful of nut butter on top of the banana in each jar.
  3. In a separate bowl, mix the coconut milk, chia seeds, vanilla, and cinnamon until well combined.
  4. Let the mixture sit for a few minutes, then whisk again to eliminate clumps.
  5. Pour the chia mixture into the jars with the banana and nut butter, adding more nut butter on top.
  6. Cover the jars and refrigerate overnight.
  7. Serve cold or warmed, adding additional toppings as desired.
