Ingredients

The filling

  • 3 pounds pears, cored and sliced
  • cup apple juice
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

The topping

  • cup all-purpose flour
  • ¼ teaspoon baking powder
  • pinch salt
  • ½ cup butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • to taste vanilla ice cream (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, mix the pear slices, apple juice, sugar, and cinnamon, then pour into a baking dish.
  3. In a small bowl, whisk together the flour, baking powder, and salt.
  4. In another bowl, cream the butter and sugar until pale and fluffy, about 5 minutes.
  5. Beat in the egg and vanilla extract, then gradually add the flour mixture, mixing well after each addition.
  6. Drop rounded tablespoons of the batter over the pear mixture.
  7. Bake for 35 to 40 minutes until the topping is golden brown and the filling is bubbly.
  8. Cool for 10 minutes before serving, optionally with vanilla ice cream.
