Ingredients

The filling

  • 3 pounds apples, peeled and sliced
  • cup apple juice
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

The topping

  • cup all-purpose flour
  • ¼ teaspoon baking powder
  • pinch salt
  • ½ cup butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • to serve vanilla ice cream (optional)

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, mix the apples, apple juice, sugar, cinnamon, and nutmeg, then pour into a baking dish.
  3. In a small bowl, whisk together flour, baking powder, and salt.
  4. Cream the butter and sugar together until fluffy, then beat in the egg and vanilla.
  5. Gradually add the flour mixture, mixing well after each addition.
  6. Drop rounded tablespoons of the batter over the apple mixture.
  7. Bake for 35 to 40 minutes until the topping is golden brown and the filling is bubbly.
  8. Cool for 10 minutes before serving, optionally with ice cream.
