Ingredients

The filling

  • 6 cups Honey Crisp apples, peeled and cut into 1-inch chunks
  • 1 unit lemon

The batter

  • ¼ cup unsalted butter, softened
  • 1 cup sugar, divided
  • ¾ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 3/8 cup whole milk
  • ¼ cup hot water

For serving

  • to taste unit heavy cream or ice cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a large baking sheet with foil or parchment.
  2. Arrange the apples in a pie plate, zest the lemon over the apples, and squeeze half the lemon's juice over them. Toss to combine.
  3. In a stand mixer, cream the butter and ¾ cup of sugar until creamy. Add flour, baking powder, and salt, mixing until crumbly.
  4. Slowly pour in the milk and beat until the batter is light and fluffy.
  5. Scoop blobs of batter over the apples and spread it evenly.
  6. Sprinkle the remaining sugar over the batter and drizzle hot water over it.
  7. Bake for 70 to 80 minutes until the top is golden brown. Let cool for 30 minutes before serving.
