Instructions
- Preheat the oven to 375°F and prepare a 13 by 9-inch baking dish.
- Peel, core, and slice the apples, then toss with lemon juice and set aside.
- In a saucepan, combine brown sugar, cornstarch, cinnamon, and apple juice, then add butter and heat until simmering.
- Pour the brown sugar mixture over the apples and toss to coat.
- In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Cut in the cold butter until the mixture resembles coarse meal, then make a well in the center.
- Add buttermilk and vanilla to the well, and fold until just combined.
- Dollop spoonfuls of the topping over the apple mixture without spreading.
- Sprinkle the topping with a mixture of sugar and cinnamon.
- Bake for 35 to 45 minutes until the apples are soft, tenting with foil if needed.
- Allow to cool for 10 minutes before serving warm, ideally with vanilla ice cream.
