Ingredients

The filling

  • 2 apples honey crisp apples, peeled, cored and cut into ¼-inch slices
  • 2 apples gala apples, peeled, cored and cut into ¼-inch slices
  • ¼ cup brown sugar
  • 2 tablespoons granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla paste or 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • a teeny pinch ground cardamom
  • a teeny pinch ground cloves

The topping

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon kosher salt
  • ½ cup granulated sugar
  • ¾ cup whole milk
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla paste or 2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a baking dish.
  2. In a large bowl, mix the sliced apples with brown sugar, granulated sugar, flour, lemon juice, vanilla, and spices.
  3. Pour the apple mixture into the prepared baking dish.
  4. In a separate bowl, whisk together flour, baking powder, salt, and sugar for the topping.
  5. Add milk, melted butter, and vanilla to the dry ingredients and mix until combined.
  6. Pour the topping over the apple filling, ensuring some filling is visible.
  7. Bake for 40-45 minutes until the filling is bubbling and the top is golden brown.
  8. Serve warm, preferably with vanilla ice cream.
