Ingredients

  • 1 tablespoon Cajun or Creole seasoning
  • 1 pound cleaned large shrimp
  • 3 ounces fully cooked Turkey/Chicken Andouille sausage
  • 1 medium zucchini
  • 1 large red bell pepper
  • cups corn kernels
  • ¼ cup chopped fresh Italian parsley leaves
  • ¼ cup chopped fresh basil leaves
  • ¼ cup dry white wine
  • 2 tablespoons olive oil

Instructions

  1. Combine Cajun seasoning, salt, and pepper in a bowl, then toss with shrimp.
  2. Place four large pieces of aluminum foil on a flat surface.
  3. Divide sausage, zucchini, bell peppers, and corn among the foil pieces, placing vegetables in the center.
  4. Top each with about six shrimp, parsley, and basil.
  5. Drizzle each with wine and olive oil, then fold the foil to seal tightly.
  6. Preheat the oven to 425°F and arrange the packets on a baking sheet.
  7. Cook for about 13 minutes until shrimp is cooked and vegetables are tender.
  8. Open the packets carefully to avoid steam and serve.
