Shrimp Scampi Foil Packets

Ingredients

The shrimp mixture

  • 40 jumbo peeled and deveined shrimp
  • 4 cloves garlic (2 grated, 2 thinly sliced)
  • ½ teaspoon kosher salt
  • 1 tablespoon extra virgin olive oil
  • ¼ cup dry white wine
  • 1 tablespoon fresh lemon juice
  • 4 pinches red pepper flakes
  • 2 tablespoons unsalted butter (melted)
  • 3 tablespoons chopped parsley

For serving

  • 1 whole lemon (cut into wedges)
  • optional whole wheat crusty bread

For cooking

  • 4 sheets Reynolds Wrap Heavy-Duty Aluminum Foil (16” each)

Instructions

  1. Whisk together grated garlic, salt, and olive oil in a bowl, then add shrimp and toss to coat; chill for 30 minutes to 1 hour.
  2. Prepare foil packets by tearing off 4 sheets of aluminum foil.
  3. Place 10 shrimp in the center of each foil sheet and top with remaining garlic slices, wine, lemon juice, red pepper flakes, and melted butter.
  4. Seal the foil packets by bringing up the long sides and folding the ends, leaving room for heat to circulate.
  5. Grill the packets over high heat for about 8 minutes.
  6. Carefully open the packets and top with chopped parsley; serve with lemon wedges.
