Shrimp and Asparagus Foil Packs

Ingredients

  • lbs large shrimp (21/25), peeled and deveined
  • 2 Tbsp dry white wine or chicken broth
  • 4 tsp minced garlic (4 cloves)
  • 2 tsp lemon zest
  • to taste salt and freshly ground black pepper
  • 6 Tbsp butter, diced into small cubes
  • Tbsp fresh lemon juice
  • 2 Tbsp chopped fresh parsley
  • 1 lb medium thickness asparagus, woody ends trimmed

Instructions

  1. Preheat the grill to medium-high heat (about 400 - 425 degrees F) and cut 4 sheets of heavy-duty aluminum foil.
  2. Divide the shrimp among the foil packs near the center and place the asparagus to one side.
  3. Pour ½ Tbsp of white wine over each pack, then sprinkle with garlic and lemon zest, and season with salt and pepper.
  4. Divide the butter pieces evenly among the packs, layering them over the shrimp and asparagus.
  5. Wrap the packets and crimp the edges together, leaving some space inside for heat circulation.
  6. Grill the packets sealed side upward for about 9 - 10 minutes until the shrimp is cooked through.
  7. Carefully unwrap the packets, drizzle with lemon juice, and sprinkle with parsley before serving.
