Lemon Garlic Shrimp Foil Packets

Ingredients

The main ingredients

  • 2 lb large raw wild caught shrimp, peeled and deveined
  • 1 lb fine French green beans, ends trimmed
  • 5-6 sun dried tomatoes, chopped
  • ½ large lemon

The sauce

  • 2 cloves garlic, minced
  • 2-3 tbsp dry white wine or bone broth
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp ground black pepper

Instructions

  1. Preheat the outdoor grill to medium-high heat, about 400°F.
  2. Slice the lemon and cut each slice into 4 pieces.
  3. In a bowl, mix minced garlic, dry white wine or broth, olive oil, lemon juice, chopped parsley, Dijon mustard, salt, and pepper until well combined.
  4. Place a large piece of aluminum foil on your work surface and add a handful of green beans in the center.
  5. Layer about 12 shrimp over the green beans, add sun dried tomatoes and lemon slices, then drizzle with the garlic lemon mixture.
  6. Fold the aluminum foil over the ingredients and seal the edges tightly.
  7. Repeat the process with the remaining ingredients to make more packets.
  8. Place the packets on the grill, seam side up, and cook for 8 to 10 minutes.
  9. Remove the packets from the grill and carefully cut open the foil to serve.
