Ingredients

The main ingredients

  • 1 pound large shrimp, peeled and deveined
  • 6 ounces fully cooked andouille or Cajun-style chicken or turkey sausage
  • 2 medium zucchini, sliced
  • 1 pound baby red or yellow potatoes, cut into 3/4-inch dice
  • 1 medium ear corn on the cob, husked and cut into 1-inch pieces

The seasonings and fats

  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon Cajun or Creole seasoning
  • 2 teaspoons seafood seasoning (like Old Bay)

For serving

  • to taste chopped fresh parsley
  • to taste lemon wedges

Instructions

  1. Combine shrimp, sausage, zucchini, potatoes, and corn in a large bowl.
  2. Add melted butter, Cajun seasoning, and seafood seasoning, and toss to combine.
  3. Preheat the grill to medium-high or the oven to 400°F.
  4. Place four large pieces of aluminum foil on the counter.
  5. Divide the mixture evenly onto the foil pieces and fold to create sealed packets.
  6. Grill for 10 minutes, flip, and grill for another 5 minutes, or bake for 15 to 20 minutes.
  7. Carefully open the packets and serve hot with parsley and lemon wedges.
