Ingredients

The bread

  • cups all-purpose flour
  • tsp. baking soda
  • ¾ tsp. kosher salt
  • 1 cup dark brown sugar
  • cup mascarpone or plain whole-milk Greek yogurt or sour cream
  • 4 Tbsp. unsalted butter
  • 2 large eggs
  • 4 large very ripe bananas
  • ½ cup chopped bittersweet or semisweet chocolate (optional)
  • ½ cup chopped raw walnuts (optional)

For preparation

  • nonstick vegetable oil spray
  • parchment paper

Instructions

  1. Preheat the oven to 350°F and prepare an 8½x4½" loaf pan with oil spray and parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat the brown sugar, mascarpone (or yogurt/sour cream), and butter until light and fluffy. Add the eggs one at a time, mixing well.
  4. Reduce the mixer speed and add the dry ingredients, mixing until just combined. Then add the mashed bananas and mix until combined. Fold in chocolate and walnuts if using.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60–65 minutes until a tester comes out clean. Let cool in the pan for an hour before transferring to a wire rack to cool completely.
