Banana Bread

Instructions
- Preheat the oven to 350°F and prepare an 8½x4½" loaf pan with oil spray and parchment paper.
- In a bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, beat the brown sugar, mascarpone (or yogurt/sour cream), and butter until light and fluffy. Add the eggs one at a time, mixing well.
- Reduce the mixer speed and add the dry ingredients, mixing until just combined. Then add the mashed bananas and mix until combined. Fold in chocolate and walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60–65 minutes until a tester comes out clean. Let cool in the pan for an hour before transferring to a wire rack to cool completely.
