Paleo Taco Salad

Ingredients

The salad

  • 1 lb ground turkey
  • ½ unit onion, diced
  • 8 cups greens of choice (kale, spinach, chard, etc.)
  • 2 unit tomatoes, diced
  • 2 unit avocados, diced
  • 1 cup olives, sliced
  • ¼ cup cilantro, chopped

The seasoning and dressing

  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp garlic powder
  • 1 tbsp olive oil
  • 1 unit lime, juice of
  • to taste unit salt and pepper

Instructions

  1. Dice the onion and heat a skillet over medium heat.
  2. Add oil if needed, then add ground turkey and onion to the skillet.
  3. Break the turkey into small bits and cook until browned, about 7-8 minutes.
  4. Season the turkey with chili powder, cumin, garlic powder, salt, and pepper.
  5. Remove the turkey from heat and set aside.
  6. In a large bowl, prepare the greens, tomatoes, avocados, olives, and cilantro.
  7. Drizzle the salad lightly with olive oil.
  8. Add the taco meat to the salad and squeeze lime juice over everything.
  9. Toss to mix and season with additional salt and pepper if desired.
  10. Serve and enjoy.
