Ingredients

The main ingredients

  • 8 ounces bacon
  • ½ cup diced red onion
  • 1 head red cabbage
  • 1 cup chicken broth
  • 1 teaspoon salt
  • 1 each Granny Smith apple
  • ¼ cup apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard

To serve

  • to taste goat cheese crumbles
  • to taste butter
  • to taste parsley
  • to taste salt
  • to taste pepper

Instructions

  1. Heat a Dutch oven over medium-high heat and cook the bacon until crispy.
  2. Remove the bacon and place it on a paper towel-lined plate.
  3. Add the onion to the pot and cook for two minutes.
  4. Increase the heat to high and add the cabbage, broth, and salt, then bring to a boil.
  5. Cover and simmer over medium heat for 30 minutes until the cabbage is tender.
  6. Uncover and stir in the grated apple, vinegar, maple syrup, and Dijon mustard.
  7. Cook over high heat until most of the liquid evaporates, about 5 minutes.
  8. Toss with the bacon, season to taste, and garnish with parsley before serving.
