Braised Red Cabbage with Apples

Instructions
- Heat a Dutch oven over medium-high heat and cook the bacon until crispy.
- Remove the bacon and place it on a paper towel-lined plate.
- Add the onion to the pot and cook for two minutes.
- Increase the heat to high and add the cabbage, broth, and salt, then bring to a boil.
- Cover and simmer over medium heat for 30 minutes until the cabbage is tender.
- Uncover and stir in the grated apple, vinegar, maple syrup, and Dijon mustard.
- Cook over high heat until most of the liquid evaporates, about 5 minutes.
- Toss with the bacon, season to taste, and garnish with parsley before serving.
