German Red Cabbage

Ingredients

  • 1 head red cabbage
  • ½ pound bacon (optional)
  • ½ cup apple juice or cider
  • tsp sea salt
  • ½ tsp cinnamon
  • ¼ tsp ginger
  • tsp ground nutmeg
  • tsp ground cloves
  • 3 tbsp coconut sugar
  • 2 tbsp balsamic vinegar
  • 1 tbsp coconut oil

Instructions

  1. If using, cook the chopped bacon in a large pan.
  2. Add coconut oil and chopped red cabbage to the pan.
  3. Sauté the cabbage over low heat for about 25 minutes, stirring frequently.
  4. Add apple juice or cider, cover, and continue cooking over low heat for about 20 minutes.
  5. Once the cabbage is tender, add sea salt, cinnamon, ginger, nutmeg, cloves, coconut sugar, and balsamic vinegar.
