Ingredients

The salad

  • ½ head medium red cabbage
  • 3 stalks celery
  • 1 green apple cut into small chunks
  • ¼ cup golden raisins
  • ¼ cup toasted walnuts

The dressing

  • ¼ cup lemon juice
  • 2 tbsp olive oil
  • 1 tsp Dijon mustard
  • 1-2 cloves garlic
  • to taste salt and pepper

Instructions

  1. Whisk together lemon juice, olive oil, mustard, garlic, salt, and pepper in a small bowl.
  2. In a large bowl, combine the cabbage, celery, apple, raisins, and walnuts.
  3. Drizzle the dressing over the salad and gently mix until well combined.
