Braised Red Cabbage

Ingredients

The cabbage dish

  • 1 small head red cabbage, cored and thinly sliced
  • 1 medium red onion, thinly sliced
  • 2 tablespoons water
  • cup chicken broth
  • 1 tablespoon red wine vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

The apples and chives

  • 1 apple peeled, cored, and thinly sliced, divided
  • 1 bunch fresh chives, thinly sliced

Instructions

  1. Marinate half of the sliced apples with chives and half the vinegar for 10 minutes.
  2. In a pot, combine cabbage, red onion, and water, cooking until cabbage begins to soften.
  3. Add broth, remaining apples, and vinegar, then cover and cook until cabbage is softened.
  4. Remove from heat, add marinated apple mixture, and toss to combine. Season with salt and pepper.
