Sauteed Cabbage

Ingredients

The vegetables

  • 1 medium onion
  • 1 medium head red cabbage
  • 1 large green apple

The seasonings

  • 3 tablespoons olive oil
  • 3 tablespoons coconut sugar
  • 3–4 tablespoons red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon ground cloves

Instructions

  1. Shred the cabbage, slice the onion into thin half-moons, and chop the apple into small pieces.
  2. Sauté the onion in olive oil over medium heat for 2 minutes.
  3. Add the apple, coconut sugar (or brown sugar), red wine vinegar, salt, pepper, and ground cloves, and stir until mixed.
  4. Add the red cabbage and cook on low heat for 20 minutes, stirring occasionally until wilted and tender.
  5. Adjust seasoning with more vinegar, salt, and pepper to taste.
