Ingredients

The cabbage

  • 1 small head green cabbage

The cooking fats

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter

The seasoning

  • 1 ½ teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ tablespoon apple cider vinegar
  • 1 tablespoon chopped fresh thyme

Instructions

  1. Cut the cabbage in half and slice it into thin ribbons, discarding the core.
  2. Heat a large sauté pan over medium-high heat and add the olive oil and butter.
  3. Once the butter melts, add the cabbage, salt, and pepper, and sauté for 10 to 15 minutes until tender and browned.
  4. Stir in the apple cider vinegar and adjust seasoning if necessary.
  5. Serve warm, optionally garnished with thyme.
