Braised Red Cabbage with Apples and Onions

Ingredients

  • 1 tablespoon pastured butter
  • 1 small onion, thinly sliced
  • 2 green apples, chopped
  • 2 cloves garlic
  • 1 small head red cabbage (about 2 pounds)
  • ¼ cup balsamic vinegar
  • 2 tablespoons honey
  • ¼ cup goat cheese
  • to taste salt
  • to taste pepper

Instructions

  1. Melt the butter in a cast iron skillet over medium-high heat.
  2. Add the onions and a pinch of salt, sautéing until translucent, about 6-8 minutes.
  3. Stir in the apples and garlic, seasoning with salt and pepper, and cook for an additional 2 minutes.
  4. Add the red cabbage, balsamic vinegar, honey, and a splash of water, mixing well.
  5. Season again with salt and pepper, then let the mixture simmer for about 30 minutes, stirring occasionally.
  6. If the pan becomes dry, add more water as needed.
  7. Once the cabbage is tender, transfer to a serving dish and top with goat cheese and fresh parsley.
