Ingredients

The nuts

  • 3 cups raw almonds

The coating

  • ¾ cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 large egg white

Instructions

  1. Preheat the oven to 180C/350F and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the sugar and cinnamon.
  3. In a large bowl, whisk the egg white until frothy.
  4. Add the almonds to the egg white mixture until fully coated, then add the sugar mixture and mix well.
  5. Transfer the almonds onto the lined baking sheet and bake for 20 minutes, stirring halfway through.
  6. Remove the almonds from the oven and let them cool for 5 minutes before stirring again to prevent clustering.
