Ingredients

The almonds

  • 2 cups whole almonds

The coating

  • 1 egg white egg white
  • 1 teaspoon cold water
  • 3 tablespoons white sugar
  • 3 tablespoons brown sugar
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 250°F.
  2. In a medium bowl, beat the egg white and water until frothy.
  3. Add the almonds and stir until well coated.
  4. In a separate bowl, mix the sugars, salt, and cinnamon, then sprinkle over the almonds.
  5. Stir the almonds until they are well coated with the mixture.
  6. Spread the almonds evenly on a lined baking sheet.
  7. Roast the almonds for 1 hour, stirring every 20 minutes.
  8. Allow to cool and store in airtight containers.
