The coating

  • ½ cup sugar
  • 1 teaspoon cinnamon
  • teaspoon salt
  • 1 large egg white
  • 1 teaspoon water

Instructions

  1. Preheat the oven to 150C/300F and line a baking sheet with parchment paper.
  2. In a small bowl, mix sugar, cinnamon, and salt.
  3. In a large bowl, whisk the egg whites with water until foamy.
  4. Coat the cashews in the egg white mixture, then add the sugar mixture and combine well.
  5. Spread the cashews on the baking sheet in a single layer and bake for 20-25 minutes, stirring occasionally.
  6. Allow the candied cashews to cool before mixing again to prevent clustering.
