Bacon Gouda Cheese Dip

Ingredients

  • ¼ cup avocado or cold pressed olive oil
  • 3 oz smoked gouda
  • cup crumbled feta or parmesan
  • 2 tbsp shredded carrot (optional)
  • ½ tsp chili pepper
  • dash paprika
  • ¼ tsp garlic (minced)
  • dash sea salt and black pepper
  • 1 tsp honey mustard
  • 1–2 tbsp chopped chives
  • 1 oz nitrate free bacon

Instructions

  1. Chop all ingredients and set aside. Soften the cheese to room temperature for easier blending.
  2. Cook the bacon and save some bacon grease. Chop the bacon and cheese into smaller pieces.
  3. In a food processor, combine cheese and chopped bacon, then slowly add the oil while mixing.
  4. Once blended, add chives, seasonings, mustard, and any vegetables if using. Blend again.
  5. For a smoother dip, add more cheese; for a chunkier texture, omit extra cheese.
  6. Garnish with extra chives.
