Bacon Gouda Cheese Dip

Instructions
- Chop all ingredients and set aside. Soften the cheese to room temperature for easier blending.
- Cook the bacon and save some bacon grease. Chop the bacon and cheese into smaller pieces.
- In a food processor, combine cheese and chopped bacon, then slowly add the oil while mixing.
- Once blended, add chives, seasonings, mustard, and any vegetables if using. Blend again.
- For a smoother dip, add more cheese; for a chunkier texture, omit extra cheese.
- Garnish with extra chives.
