Paleo Apple No-Cider Donuts

Ingredients

  • 2 cups almond flour
  • 2 tbsp coconut flour
  • ¼ cup full fat coconut milk
  • ¼ cup applesauce
  • ¼ cup maple syrup
  • 2 large pasture raised organic eggs
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 2 tbsp Primal Palate Apple Pie Spice (or 1 ½ tbsp cinnamon, ¼ tsp nutmeg, ¼ tsp ginger)

Instructions

  1. Preheat the oven to 350°F and spray a silicone donut pan with avocado or coconut oil spray.
  2. In a medium bowl, whisk together all the dry ingredients.
  3. Melt the coconut oil and add it to a separate bowl along with the wet ingredients, whisking to combine.
  4. Pour the wet mixture into the dry ingredients and mix until well combined.
  5. Scoop the batter into the donut pan, filling each cavity up to the line.
  6. Even out the tops of the donuts with your fingers.
  7. Bake for 16-17 minutes.
  8. Remove from the oven and let cool for 2-3 minutes before popping the donuts out of the pan.
  9. Lightly spray coconut oil on top of each donut and sprinkle with additional cinnamon and/or sugar.
  10. Enjoy your donuts!
