Ingredients

  • cups all-purpose flour
  • teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup sprinkles

Instructions

  1. Whisk together the flour, baking powder, and salt in a medium bowl.
  2. In a large bowl, beat the butter and granulated sugar until creamed, then add the egg and vanilla and mix until combined.
  3. Combine the dry ingredients with the wet ingredients and mix until just combined, then fold in the sprinkles.
  4. Scoop the dough into balls and optionally dip the tops in more sprinkles.
  5. Chill the dough balls in the refrigerator for at least 2 hours.
  6. Preheat the oven to 350°F (177°C) and prepare baking sheets.
  7. Arrange the chilled dough balls on the baking sheets and bake for 12-13 minutes until lightly browned.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
