Ingredients

The chicken

  • 16 oz skinless chicken breasts

The breading

  • 1 cup panko bread crumbs
  • ½ cup grated parmesan cheese
  • 1 egg beaten egg
  • 2 teaspoons Italian seasoning
  • salt and pepper to taste salt and pepper

The toppings

  • ½ cup shredded mozzarella cheese
  • ¾ cup marinara sauce

The oil

  • as needed spray cooking oil (olive oil recommended)

Instructions

  1. Spray the air fryer basket with cooking oil.
  2. Slice the chicken breasts in half horizontally to create 4 thinner cutlets and pound them to flatten.
  3. Combine panko breadcrumbs, parmesan cheese, Italian seasoning, salt, and pepper in a bowl.
  4. Place the beaten egg in another bowl.
  5. Dip the chicken in the egg, then coat with the breadcrumb mixture.
  6. Place the chicken in the air fryer and spray the top with cooking oil.
  7. Cook for 7 minutes at 370°F.
  8. Open the air fryer, top each breast with marinara sauce and shredded mozzarella, and cook for an additional 3 minutes until the cheese melts.
